Meal Prep | Lunch Edition


Recently I’ve discovered the BEST homemade lunch for work that everyone should 100% try it out. It’s healthy and delicious (delicious is the key word).

Here’s what you’ll need:

  • Quinoa
  • Kale
  • Grape Tomatoes
  • Small piece of Salmon (or you can substitute with any kind of meat)
  • Pine nuts
  • Red/Yellow/Orange peppers
  • Lemon pepper salt
  • Coconut oil
  • Garlic
  • Onion

To start off, you’ll need to first cut up the kale into little chunks, cut the grape tomatoes in half, season the salmon (or any kind of meat) with lemon pepper salt and cut up the peppers into little cubes.

First, preheat the oven at 350 and grease your pan to start baking the salmon for 30 mins. While the salmon is cooking, start cooking your quinoa on the side. Then startheating up your pan with a little bit of coconut oil on medium heat. Add in some garlic for flavor, then gradually add in the assortment of peppers, onion, kale and grape tomatoes. Allow it to cook until tender (around 10 mins or less).

Now that everything is cooked, you can start packing your lunches!

Place the quinoa on the bottom, top it off with the kale, garlic, onion, tomato and pepper mixture on top of it. Add the salmon on top and sprinkle some pine nut to top it all off. Just like that, you’re ALL DONE!

The High Line • Chelsea Market • Meatpacking District 

Beyond this point you may encounter nude sunbathers. In case you were wondering, I didn’t see any.


BEST. POPSICLE. EVER. All homemade, fresh fruit Popsicles that melt your problems away on a hot summer day. 

This past July 4th weekend, Sagi and I went on a mini vacation to explore NYC! This is one of the many places we stopped by – The Meatpacking District. 

We first went on The High Line, and walked up and down the bridge. Throughout the whole bridge, there are art left and right for you to admire. When you walk towards the middle, there are a bunch of vendors, such as this popsicle place.

When you walk down the stairs from the middle, you will end up at The Chelsea Market aka the best location for all foodies. There are more than 15 vendors inside, from Italian food to fresh seafood. Sagi and I found the BEST food combo ever and inexpensive as well. If you purchase a fresh pita bread from DIZEN GOFF and a bowl of fresh lobster bisque from The Lobster Place, you will taste heaven in your mouth. No joke, Sagi wanted to tell the security guard to try it. 



Besides those two vendors, there are lots of other delicious places to try from. Unfortunately, we ate too much before we arrived :(. Tip of the day: don’t be like Sagi and I, be sure to go on an empty stomach!!!

Fresh & Co Review 

 
Chicken fresco & Thai turkey quinoa bowl 

Delicious AND healthy?! That’s the best kind of food combination out there, and I cannot agree more. Fresh & Co is the place to go, in New York City if you want that food combo. They have fresh salads, sandwiches, soups, and quinoa bowls. I picked the Chicken Fresco sandwich and the Thai Turkey quinoa bowl, both very delicious.

The Chick Fresco has slices of chicken with avocado and cheese, the combination is just mouth watering. The items inside were so fresh and you can definitely taste it, it’s something you could make at home. The Thai Turkey quinoa bowl is made with thai turkey pan fried with a ton of different veggies, on top of brown organic quinoa. Both very healthy, and the size is pretty big as well.

The environment of the store can be described in one word – welcoming. You get that “farm to table” feeling when you step inside of the store. You can smell how fresh everything is and you can see how everything is being made. There were a good amount of people there, not too many seating areas, but the store itself is pretty long. The staff is very friendly, it really puts that cherry on top of a great overall experience.

I’d definitely recommend this place to anyone who is looking for a quick, healthy meal in NYC. Have you ever tried this place? If yes, which is your favorite item on the menu??

Rambo’s Country Store review 

   
   

Like I mentioned in my previous post, we found this cute little store in Califon, NJ. This store has been around since the 1990’s, it still has that rustic feel to it. The store itself is small, but big enough to have a deli/hot sandwich station and be a small convenience store. 

The deli/ hot sandwich section is THE BOMB! We got a pulled pork sandwich, so fresh and delicious. We also got their famous burger. We usually get our burgers medium well, but this only had one option of cooking it well. So we were a little disappointed at first, but let me tell you…that was the BEST well done burger I’ve ever had. It was so juicy and soft, it almost feels like it melts in your mouth. You just have to try it out for yourself!

Canton Palace: Somerville, NJ

   Fried tofu with Chinese vegetables (紅燒豆腐). The tofu was perfectly pan fried, but soft on the inside. It was surrounded by bean curd and Chinese vegetables. It was so juicy and savory. Definitely recommend this dish to all the vegetarians and non-vegetarians out there.

Sweet & sour ribs (京都骨). This was really crispy on the inside and the sauce is sticky. It was like a burst of flavor in your mouth. Fresh steamed fish (盲曹魚). This was really delicious, you can really taste the freshness. However, this dish is definitely not for everyone. But, if you’re Chinese and have had this before, then this probably looks awesome to you.
  Steamed crab with garlic, ginger, green onions, on top of noodles (清蒸水蟹伊麵底). It has really strong flavors, but I was really looking forward to pan fried noodles and crab, rather than steamed. Overall, it was still delicious, but difficult to eat.   All of our food. 

This past weekend, my family and I went to one of our favorite Chinese restaurant in New Jersey, call Canton Palace. The address is: 216 W Main St, Somerville, NJ 08876. We went with our family friends, since they were moving away, we wanted to have on last get together. My family and I come to this restaurant often, because their food is really delicious and affordable. The service is really nice, but the atmosphere is a little hectic.

I would definitely recommend going to this restaurant if you ever get the chance. I’m really picky when it comes to food, given that I was born in Hong Kong, I have really high expectations when it comes to Chinese food. And this place is really authentic and the flavors are great. I give this restaurant a 10/10.

KBG-oodness!

 Can we just take a moment and look at this beaut?! This bowl right here is korean styled Chipotle. If you like Chipotle, then you have to try this restaurant out! This restaurant is called KBG BBQ, located in New Brunswick, NJ. The way the restaurant is set up is very similar to Chipotle. There’s a service line, where you pick your lettuce, rice, meat, and toppings. For my bowl, I got: lettuce, brown rice, noodles, spicy pork, cucumbers, and corn. Topped it off with the KBG mild sauce. Let me tell you, this bowl is DELICIOUS. The pork is perfectly cooked, everything goes so well together, it’s basically a match made in heaven.

Besides a bowl, you can make a burrito and a noodle soup bowl. You can choose from BBQ chicken, spicy pork, bulgolgi, or vegetables. Everything sounds so good, it’s so hard to choose a meat sometimes. Onto the toppings, I can’t even list them all for you, because that’s how many there are. They have kimchi toppings, but I’m not a huge fan of kimchi. Next to the korean Chipotle line, there is also a bubble tea station. You can grab a cup of bubble tea, while enjoying your bowl.

I give this restaurant a 10/10, definitely recommend it 100%! Where should I try next??

PHO-tastic! 🍜

Pho thanh huong in Parsippany, NJ

This weekend, my family and I stumbled upon this restaurant in Parsippany, NJ. It’s a Vietnamese restaurant. It looks like a small restaurant on the outside, but it’s actually pretty nice inside. The staff is incredibly friendly, but the AC was really low. For anyone that has had pho, you know how important it is to have AC while eating it. Basically, we were all sweating. But the food was amazing.

I ordered the brisket pho, size medium, $7.69 (around that price). The bowl is huge, there was a good chunk of brisket too, as well as noodles. The mint and bean sprouts that they serve you is so fresh. I’ve been to a pho restaurant before, where all the mint were wilting.


We also got some appetizers. The Vietnamese spring roll and this shrimp paste bamboo roll. The Vietnamese spring roll was so crunchy and the sauce and the lettuce was so fresh. Definitely one of the best spring roll I’ve had thus far. The shrimp paste bamboo roll was a little odd. It tasted almost like plastic, wouldn’t recommend that appetizer.


 Overall, I LOVED this restaurant and will definitely return back ASAP!! If you’re ever in the NJ area, definitely try this pho restaurant out!

Homemade basil pesto with chicken, and avocado pasata!

Can you say YUM!? This dish was so incredibly easy to create, yet so delicious. The pesto sauce is homemade and it was my first time making it. I found the pesto recipe on Food Network. Check out the instruction from the site, it’s super simple to recreate.

Ingredients for chicken & pasta:

  • 2 packs of thinly sliced chicken breast
  • 2 tablespoon Montreal chicken spice
  • 2 tablespoon Chilli powder
  • 2 tablespoon Olive oil
  • 3 cloves Garlic
  • 2 ripe avocados
  • 1 box of pasta of your choice
  • salt and pepper to taste
  • squirt of lemon juice

Instructions:

  1. Cook the pasta according to the box.
  2. Marinate the chicken with olive oil, Montreal chicken spice, garlic, and chilli powder. Mix it well and start grilling/pan fry it.
  3. Cut the avocados open. Place the avocados, garlic cloves, lemon juice, salt and pepper in a blender. Allow it to blend until it has a creamy consistency. Mix it in with the pasta.
  4. Now you can start placing it on your place. First add the pasta, then chicken and pesto sauce.

Ramen Burger – the healthy version

Ramen burger has been the hype lately and I still haven’t had the chance to try it. Nonetheless, I decided to make it myself and recreate this delicious dish. If you’re interested, then keep on reading.

Ingredients:

  • 1 pack of ground turkey
  • 2 packs of ramen noodles
  • 1 ripe avocado
  • 4 portabella mushroom
  • 1 potato
  • provolone cheese
  • 2 eggs
  • salt and pepper to taste
  • 2 tsp soy sauce
  • 2 tsp sesame oil
  • olive oil for cooking

This recipe is super simple, homemade. It’s definitely healthier than your average burger or ramen burger. 😉 Check out how I made mine:

  1. Cook your ramen until tender, drain it and rinse it with cold water. Make sure it’s cooled before proceeding to the next step.
  2. Mix your cooled ramen with 2 eggs until well mixed. Add salt and pepper to taste. Pack a square patty size in cling wrap, this should yield 8 patties in total. After wrapping it, place it in the fridge for at least 20 minutes.
  3. With the ramen in the fridge, you can now cook the turkey burger. Mix the ground turkey with the soy sauce, sesame oil, salt and pepper together. Start forming your patties, it should yield 5 thick patties.
  4. Add oil to your pan and start placing your patties down. Cover and let it cook through. Place cheese on top when done.
  5. Now, cut your potatoes into small strips. Start frying with olive oil when finished. Take it off the pan when done.
  6. Lastly, cook you portabella mushroom. Put it in a pan with some oil, cover it and let it cook through.
  7. Now you can start cooking your ramen “bun”. Put some oil on a pan and start frying the ramen 3 minutes per side.
  8. Slice your avocado now!
  9. You can start putting your burger together now! Ramen on the bottom, then the portabella mushroom, followed by the turkey burger with cheese and topped with a fresh avocado. Place the homemade fries on the side and you’re done!

Carlos Bakery in Hoboken, NJ

HI everyone! I just recently became a writer for the Odyssey Online, check out my newest article here. If you agree with what I wrote, then please share it on your social media, it’ll help me a tremendous amount! 🙂   My family and I went to Hoboken, NJ this past weekend for my sister’s early early birthday celebration. All she kept saying was, “I want to go to Carlos Bakery!!” So, we searched for the address and finally found it! The store itself is fairly small, not as big as I thought it was going to be. The first thing you do is take a ticket, our said “15”. We were only on number 88 at that point. As we were waiting for our number, we were looking at all the delicious pastries and try and decide which 3 pastries we want to get. We decided on the below two:
Mixed berries cheesecake! It was soo fluffy and creamy, so delicious. The berries taste so fresh, it doesn’t taste like it’s been sitting on top of the cheesecake for days. The cheesecake had this crust that tasted super doughy. It almost tasted like dough that is cooked on the outside, but a little uncooked on the inside. Can you just picture that?? We also got the…  Dark chocolate mousse cake! I wasn’t the biggest fan of this. It was quite messy and the chocolate was really strong. We thought it was a cake, but it turned out to be a mousse cake, so we were kinda disappointed. But the chocolate was really smooth, if you’re into that, then this cake is for you!

 I would definitely go again and try different pastries!
