Two nights ago, I created this delicious, mouthwatering, tender, juicy, chicken satay over rice. This recipe is SUPER simple and requires only a handful of ingredients. I was going to create actual chicken satay with this recipe, but I thought it would taste super delicious as a sauce like meal. So let’s get right into the recipe!
4 Chicken Breasts
1 cup of Coconut Milk
2 tablespoon of Curry Powder
2 teaspoon of Turmeric Powder
2 teaspoon of Sugar
1 teaspoon of Salt
First, cut the chicken breasts into cube form – put that aside. Also, cut up the cauliflower into individual cauliflower bite form. Now, combine all the dry ingredients together – sugar, salt, turmeric powder, and curry powder – in a large bowl. Then, add in the coconut milk, and start stirring it together into a crepe mixture consistency. Slowly add in the cubed chicken breast in the mixture. After it is all submerged into the mixture, slowly add in the cauliflower – make sure they’re all submerged into the mixture as well. Let it sit for 5 minutes in the mixture.
At this time, pour some olive oil, or any kind of oil, into a cooking non-stick pan. Put your fire on medium heat, allow the oil to heat up at this time. After the 5 minutes is up and the oil is all heated up, you can start cooking your chicken and cauliflower. Pour out the whole mixture onto the heated pan and allow it to cook, until the chicken and cauliflower are cooked through all the way. The cooking time should be around 15 minutes or less. At this time, you can start placing your rice on your plates. When the chicken and cauliflower are fully cooked, place the combination over rice – and enjoy!
